1/2 cup uncooked quinoa
1 head of broccoli
1 small yellow onion, diced
1/4 cup breadcrumbs
1/4 cup shredded cheese (cheddar or Swiss are both great!)
Boil 1 cup of water. Add quinoa and stir. When water begins to boil again, lower to a simmer and cover for about 15 minutes. When all the water has been absorbed, remove from heat and let cool completely.
Satué the onion until it softens. Set side. In the same pan, sauté the broccoli (I’ve also blanched it). Dice broccoli into very small bites.
Mix everything together in a large bowl leaving the egg untl the end. Make sure you beat the egg before adding it to the mixture. Mix well so that you can form patties that stick together. If they are crumbly, add an egg.
Heat some olive oil in a pan, and make your patties. I made each using 1/4 cup of the mixture. Just make a ball out of the mixture, and squash it down a little bit. Cook each patty for about 7 – 8 minutes on each side on medium heat. You want the patty to develop a crust, but not to burn, so watch them carefully. Let cool for a couple of minutes before eating.
