2 1/2 cups flour
2 cups sugar
1 T pumpkin pie spice
1 tsp baking soda
1/2 tsp salt
1 cup pumpkin purée
1/2 cup vegetable oil
2 large apples, peeled and diced (I used Granny Smith)
Preheat oven to 350 degrees F. Butter & flour your muffin tin.
In a large bowl, sift together the flour, sugar, pumpkin pie spice, baking soda and salt.
In your mixer with the paddle attachment, mix the eggs, pumpkin and oil.
Add the pumpkin mixture to flour mixture; don’t over mix. Gently fold in apples.
Don’t fill the muffin tin more than half way! Bake 30-35 minutes or until a toothpick comes out clean.
