Broccoli bacon salad

*Tip: Divide in half or 1/3 for a smaller crowd or 4 people or less.

*Tip 2: Put on as much dressing as you’d like (you don’t need to use it all!) but save some in the fridge in case it dries out and you want extra.

INGREDIENTS:

3 heads of broccoli, rinsed and dried

1 to 1 1/2 cups shredded cheddar cheese

8 slices cooked bacon, crumbled

1/2 red onion, chopped

1 1/2 cup mayo

1/3 cup sugar

5 T. vinegar (I use cider vinegar)

 

INSTRUCTIONS:

Chop the broccoli into bite size pieces. In a large bowl, gently toss the broccoli, cheese, bacon, and onion.

In a small bowl, whisk the mayo, sugar, and vinegar. Adjust to taste.

Pour dressing over broccoli mixture and gently toss to combine.

Refrigerate at least 1 hour before serving.
