Honey-roasted carrots

Preheat oven to 400 F. Line a cookie sheet with a piece of aluminum foil.

Cut your carrots (especially if they’re thick) in half lengthwise and spread them out on the foil.

Drizzle a little bit of EVOO on top – just enough to coat, not soak!

Add a tad of S&P. Just a wee bit!

Drizzle some honey on top of the carrots. No more than 1/4 a cup for a whole bunch of carrots. (I used about 4 T for the amount of carrots in this picture)

Bake for 20-30 minutes or until tender.
