Asparagus Mint Risotto

INGREDIENTS:

*Use this for your risotto base plus the following:

1/4 tsp. lemon zest, plus more for garnish

1 T fresh lemon juice

1 tsp. fresh mint leaves, chopped

Asparagus, blanched

Fresh Parmigiano-Reggiano

 

INSTRUCTIONS:

Make risotto according to recipe base above. Toward the end add the lemon zest, lemon juice and mint leaves.

Before serving, top with extra lemon zest, asparagus, and fresh Parmigiano-Reggiano cheese.
