Bacon, 8 strips cooked and chopped
1 package of fresh broccoli, chopped into bite size pieces (or smaller!)
1 shallot, diced
1 cup shredded cheese (Swiss or Colby Jack are great with this!)
1/2 cup heavy cream
3/4 cup whole milk
1 pie crust, pre-baked (I use deep dish!)
Nutmeg, a pinch, grated fresh preferred
S&P to taste
Pre-bake your pie crust according to package directions. Then preheat oven to 350 F.
In a pan on the stove, cook the bacon and set aside to cool. Keep the bacon grease!
Add the shallots to the pan and sautée in the bacon drippings, 2-3 minutes. Then add the broccoli and continue to cook 3-4 minutes. Add the chopped bacon and stir to combine.
Pour the broccoli mixture into the bottom of the pie crust. Top with a heaping handful of cheese, about 1 cup.
In a bowl, whisk the eggs, milk, heavy cream, nutmeg, and S&P. Pour the egg mixture into the pie crust.
Line a baking sheet with foil (this avoids any potential mess) and place your quiche on top of the foil.
Bake 30-40 minutes or until center no longer jiggles.
