Preheat oven to 400 F. Line a cookie sheet with a piece of aluminum foil.
Cut your carrots (especially if they’re thick) in half lengthwise and spread them out on the foil.
Drizzle a little bit of EVOO on top – just enough to coat, not soak!
Add a tad of S&P.
Drizzle some honey on top of the carrots. I used about 2 T for the amount of carrots in this picture.
Sprinkle grated Parmesan on top.
Bake for 20-30 minutes or until tender.
