Tomato Mozzarella Salad


6 campari tomatoes, cut up, seeds washed off

1/2 of an 8oz. container of fresh mozzarella balls



1/4 tsp. dried oregano

1 T. finely chopped curly leaf parsley

A pinch of garlic powder



In a small bowl season the tomatoes with S&P.

Add in some EVOO – a little at a time, but enough to coat the tomatoes. Toss in the oregano, parsley, and garlic powder. Stir gently.

Add the mozzarella and stir gently.
